Strawberry-Kiwi sandwich cake

Strawberry-Kiwi sandwich cake-----Super soft, Super yummy & Super easy.........    
My daughter liked it so much, This cake is so moist,once they were cooked she couldn't stop eating them.this is the easiest recipe & fast to cook.
Happy Me & yes it was difficult to click pic today, as she was not ready to leave them.
Recipe for both egg lees & with egg.











ingredients

1 cup maida
4 tbsp powdered sugar
4 tsp strawberry crush
4 tsp kiwi crush
1 tsp baking powder
1/4 tsp baking soda
1 tsp vanilla essence
2 eggs or 3/4 cup curd
1/2 cup oil/ butter
2 drop red food coloring







In a bowl mix oil,  vanilla, sugar & egg or (curd & baking soda if making egg less). Mix till light & fluffy.
Mix maid & baking powder together & slowly add to liquid. Mix till no lumps in mixture. 
Saprete in two equal part in different bowls. Mix strawberry crush & color in one bowl & Kiwi crush in another bowl.







Grease sandwich maker & heat it for 2 min.
Now pour 1 tsp kiwi mixture then 1 tsp strawberry mixture, repeat it once more. Fill all 4 blocks like this.




Now close it & cook for 4 min ( for egg-less 5-6 min). Check it with a knife. If knife comes clean,Your sandwich cake is ready.

Uttapam sandwich in sandwich maker

Uttapam sandwich  easy easy recipe ..










Ingredients

1 cup suji
1 cup curd
1/2 capsicum chopped
1 onion chopped
1 tomato chopped
2 green chilli chopped
salt to taste
2 tbsp oil



Mix all things together in a bowl except oil. Leave it for 15 min.
Grease sandwich maker & pour some batter in each space.
Cook for 5 min. Open it & pour few drop oil  & cook for another 5 min. done .

Instant moong daal dosa

Instant moong daal dosa, a very easy recipe & light for tummy too.









Ingredients 

1 cup yellow moong daal (dhuli moong daal)
1 cup rice flour
4 methi dana
salt to taste
5 boiled potato (peeled & crushed)
10 kari leaves
1/2 tsp mustard seeds
1 tsp sambhar powder
pinch of heeng
2 tbsp oil
1/2 capsicum chopped
1 tomato chopped
2 green chilli chopped
2 whole dry red chilli



Sock moong daal & methi dana for 1/2 hour. Grind moong daal to make a smooth paste.
Add rice flour with daal paste using your hand & leave for 15 min. Add salt & some water to loose batter.
Heat 1 tbsp oil in a pan add mustard seed , chilli , heeng & kari leaves.
Stir now add potato, capsicum, tomato, green chilli & sambhar masala & salt. Mix well & fry for 5 min.Stuffing ready.
( you can add onion too)
Heat nonstick dosa tawa & add few drop oil, now pour a ladle of batter onto the hot tawa.
with a little pressure, swirl the ladle in circles to spread out the batter.
drop few drops of vegetable oil all over the dosa & cook on medium heat till the bottom side of the dosa becomes light brown.
Stuff the dosa & Fold it.Serve with sambar& chutny.

Tomato soup

Piping hot delicious tomato soup......
This simple tomato soup is perfect in taste.












Ingredients 

1/2 capsicum
1 onion
2 tomato
5 clove garlic
1/2 tsp cumin seeds
1 tbsp butter
1/2 tbsp ghee
pinch of black pepper
1 bread crumb ( wheat bread)
oregano to sprinkle
salt to taste



Heat ghee in a pressure cooker Add cumin seeds. Now add garlic clove crushed & fry till brown. Add all vegetable chopped, 1&1/2 cup water & salt. Close the lid & cook for 10 min.
Now grind this preparation in a paste. Add bread crumbs & grind again. 
Cook this paste open for 2-3 min more. Serve in a bowl with butter. Sprinkle black pepper & oregano.
Serve HOT.

If you like it spicy add 1 green chilli while cooking.

Spring potleez

Spring potleez...










Ingredients
1 Onion sliced
2 Spring onions sliced
2 Carrots sliced in thin strips
1 capsicum sliced in thin strips
1/2 small Cabbage shredded
2 whole red chilli seeded & chopped
2 tbsp oil 
oil for deep-frying
Salt to taste
a pinch White pepper
1 tsp soya sauce
1 tsp cornflour
5 tsp Maida



For wrappers mix maida with salt & 1/2 tsp oil & make a dough. 
Divide the dough into small portions & spread each like small roti. Leave it for 5 min befour stuffing.


For stuffing---
Heat 2 tbsp oil in a pan. Add onion, spring onions, carrots, capsicum, cabbage and salt and stir. 
Add pepper powder, red chilli & soy sauce and mix. Cook till the vegetables soften. Set aside to cool.
Heat sufficient oil in a small pan. Make a paste of cornflour with 2 tbsp water.
Spread the spring roll wrappers. Divide the stuffing into small portions & stuff it with small amount veg on each wrapper. 
Fold in the edges and make potlee. Apply cornflour paste to seal. Keep the potlee under a wet cloth.
Heat oil and deep fry till golden.
Serve it with schezwan sauce.

Fresh coconut laddu.

Test of coconut so refreshing & coconut laddu just awesome.
Quick coconut laddu.






Ingredients

1 Fresh coconut grated 
1 Nestle milk maid don't use the entire tin
2 tsp milk powder
1/2 tsp cardamom powder 
1 tsp deshi ghee
fried almond cashew & raisins
Coconut powder 4 tsp









Heat ghee in a kadhai add coconut saute them for 4-5 min on low heat. Add milk powder & condensed milk ,mix well. Keep stirring on low flame. Add cardamom powder & nuts mix it again. Cook the mixture for 5 min , make sure it do not stick to the karahi. Turn of the flame let it cool.Now roll them in round shape & roll them in coconut powder. Done.

Khandvi

Very easy & simple dish, try it now.









Ingredients

1 cup besan
1 cup curd
2 cup water
1/2 tsp ginger paste
1/2 tsp turmeric powder
salt to taste
2 tbsp coriander leaves finely chopped
2 tbsp oil
1/2 tsp black mustard seeds
4 green chilli finely chopped
10 kari patta
pinch of heeng





In a big bowl add curd & besan together. Mix well now add ginger paste, 1 tbsp oil, turmeric & salt. Mix it again.




There should be no lumps in this better. Add 1 cup water mix well & add rest of the water (1 cup).
Batter is ready.
Heat a deep pan add batter



Cook for approx 10 min on low heat. Keep stir evenly to avoid lumps formation.



 When done pour a ladleful on a large plate back side. Spread  thin with the back of a large flat spoon.
When cool, cut into wide strips. Now roll each strip. Place in a dish. 
Sprinkle coriander on khandvi rolls, Heat oil in a pan add mustard seed, heeng, curry leaves & chilli. now pour over khandvi rolls. Serve with mint chutny.
