Rasmalai to share love & happiness.....

Such a simple dessert to prepare at home ........ "Ras" meaning "juice" and "Malai", meaning "cream".a rich cheesecake without a crust. so give it a try & enjoy the ultimate happiness & joy...... <3its a sweet prepared with paneer soaked in rich flavored creamy milk...







Ingredients


milk- 2 liter 

1/4 cup lemon juice

1 1/2 cups sugar
4 1/2 cups water
heavy bottom Pan
1/8 teaspoon crush cardamom
1 tablespoon sliced almonds and pistachios to garnish

Boil 1 liter milk in a heavy bottomed over medium-high heat, As the milk comes to a boil, add the lemon juice slowly and stir the milk,curd will start separating, turn off the heat.drain the whey using a strainer line with muslin cloth.Wrap the curd in a muslin cloth, rinse under cold water, and squeeze well. This process takes out the sourness from the lemon.Taking the right amount of water out of the paneer is the most important part of this recipe... place paneer on a dry, clean surface.



and knead the paneer for 3-4 minutes until the paneer is almost rolls into smooth soft dough.Divide the dough into 12 equal parts and roll them in smooth balls,when forming the balls, lightly press to make about 3/4″ patty shape.



Mix the sugar and water in a heavy bottom pan with lid on medium high heat and bring to a boil.Add the paneer balls and close the pan.turn the heat to medium and cook for about 15 minutes.Make sure the pan is large enough to accommodate the finished rasgullas patties,




as they will expand to about double in the volume while cooking.Close the heat.Take out the patties from the syrup ....Boil the rest of d milk in a frying pan on medium heat until the milk reduce to about 2 cups, frequently stir the milk as the milk burns easily in bottom . Add the sugar and the Rasmalai patties in milk. Let it cook for few minutes.Add the cardamom and mix in. Garnish with sliced almonds and pistachios.


Serve the Rasmalai chilled.



By using color u can give it a different look.
