Masala baingan bharta....Eggplant Bharta, easy to make & yummy in taste.
3 medium sized eggplants or 2 big.
2 tbsp oil
2 medium-sized onions chopped fine
1 tsp cumin seeds
4 cloves garlic chopped
1/2 inch ginger grated
4 green chillies as i like spicy one
1 large tomato chopped
1/2 tsp coriander powder
1/4 tsp red chilli powder
1/2 tsp garam masala
salt to taste
Roast the eggplant on a gas top by placing them straight on the burner on low flame, check with a knife its inner part will be soft. let it cool & peel off the charred skin.
Now heat a pan & add oil, when hot, add the cumin seeds and cook till the spluttering stops. Now add the onion & green chilli & fry them till soft.
Add ginger, garlic & fry for 1 min. Add all spices stir & add salt. Now add the eggplant and mash while mixing. Now place the tomato in center & cover it with baingan & cover the lid. Cook for five min. Add the chopped fresh coriander and stir.turn off the heat.
Serve hot with Chapatis or Rice
